SUGARCANE RAW BAR GRILL Like virtually all the new restaurants opening in Dumbo, Brooklyn, this one captures the stunning water view both indoors and on a patio. It’s a big, vibrant place — 11,000 square feet, with 300 seats, in the Empire Stores complex — with three kitchen stations run by the chef David Sears, under the direction of the chef and partner Timon Balloo, who also oversees the group’s Miami flagship and Las Vegas branch. The menu mixes Asian, Latin and American influences, with bites like bacon-wrapped dates, an array of sushi rolls, crudos and ceviches, and more substantial Korean-style short ribs and lamb chops.
