Essential Miami restaurant Sugarcane Raw Bar Grill will be the latest restaurant to join the new Empire Stores complex in Dumbo, following the recent openings of Cecconi’s and VHH Foods. After an initial “early summer” estimation, the opening has been pushed back to August, but new renderings reveal what to anticipate.
CetraRuddy Architecture shows the 11,000-square-foot clubstaurant — it’s now managed by the same company that owns SushiSamba — will have a Miami feel, with bright colors and low lighting, helped along by views of Manhattan’s skyline and the Brooklyn bridge in the background.
Menu items at the Miami and Vegas locations range from Argentinian to Korean influences, reflecting the mixed heritage of chef Timon Balloo, who is Chinese-Indian from Trinidad. It will likely include raw preparations (crudo, sushi), open-fire grill items (beef short ribs, lamb chops a la carte), and small plates from the kitchen.
Sugarcane first opened in Miami in 2010, scooping up a best new restaurant semifinalist nod from James Beard in 2011. Stay tuned for more.
